Happy almost-humpday! How was everyone’s Tuesday? Well I went to work this morning despite having a 100 degree temp…I didn’t think that was too high…? I took some Ibuprofen and my head felt weird most of the morning. I don’t know why Ibuprofen always makes me feel so out of it!
To pump myself with some vitamins and minerals I had an unpictured chocolate Amazing Grass shake this morning. Lately in my shakes and Green Monster’s, I’ve been adding tons of fiber! I’ve been adding a TB or 2 of this stuff:

8 grams of fiber for 2 TB and it’s a ‘bulking’ fiber so it keeps ya regular….I can attest that it works! Nothing fake either, love this stuff
I am trying to use up some random stuff in my cabinets before we move, and I found some TVP granules and made some “burgers!”
Ummm…definitely different. I think it really depends what you season it with. It definitely needed some condiments-I used dijon mustard, Annie’s ketchup and banana peppers. Oh and some hot sauce adding last minute. I also had some unpictured roasted veggies.
Oh and bad lighting for all these pics? Check. It’s always dark when I eat at home and we don’t have the best light for pics!
yeah…this times like 4. Loooove roasted pumpkin seeds! Reminds me of childhood when we would roast seeds after carving.
Ok with being sick, I haven’t worked out since Saturday, when I only did some light hiking. Let’s just say that being sick hasn’t really robbed me of my hunger either. Oh well, I’ll get back into it when I feel better. I even bought a membership! I can’t wait for spin class, such a good workout! And it’ll be motivation because I’m paying for it.
Well we’re supposed to get up to 2 feet of snow within the next couple of days so hopefully we get snowed in! I love when it blizzards and work is closed and you’re just ’stuck’ inside. We usually bundle up and put on the big boots and go exploring and trekking outside. We’re different I know

Sorry I haven’t posted in forever….I’ve been sick! Ugghhh I hate being sick!! I actually haven’t been sick in years but it is for sure going around. I tried going to work today, but left early because the body aches, chills, headache, and fever are really not fun conditions to work in! At least I’m not throwing up. This is so not an ideal time for me to be sick either. We are closing on our house (first for us!!) this Thursday, meaning we have Fri and little bit of Saturday to move/clean the apartment. Soooo I should be packing all of our shit belongings!! Oh well, hopefully today will be the last day of this.
I don’t have a ton of pics from the last week because, well I haven’t really felt up to taking pictures, especially when it’s canned soup!
Here are some before I became a POS (pile of…you get the idea).
Apple chicken sausage, ton of veggies, Guiltless Gourmet black bean dip, and a dollop of hummus. Super filling and yum!
Peanut butter Banana pudding! In a blender I mixed 1 cup unsweetened vanilla almond milk, 1/3 of a banana, 1 TB peanut butter and 1 tsp guar gum. Blended and refrigerated until I wanted to eat it and it was nice and thick.
Super yummy breakfast. Pumpkin Pancakes with Apple-yogurt “syrup.”
I didn’t follow a recipe for the pancakes, I just threw in some pumpkin, greek yogurt, couple egg whites and ground oats and spices. The batter was suuuper thick. Then for my “syrup” I microwaved some apple chunks until soft, left a little bit of water in the bowl and added some greek yogurt, cinnamon and couple drops of Nu Naturals Stevia. Omg….this was amazing! I loved the apple-yogurt mix and will definitely be making that again. I would probs just eat it plain, as is. There are no rules
At Sunflower Market they had red quinoa on sale. I compared it to the regular and the stats were pretty much the same, except the red had more fiber so I decided to give it a whirl. We’re pretty low on groceries because I’m sick, and Ben could live on cereal and pasta his whole life, so he’s content. This is just something I threw together with what we had!
I cooked the red quinoa according to the box. I topped it with some red beans, fire-roasted tomatoes, cilantro and bunch of spices. It was good!
Ok so I’m having a little pity party over here. My friend just did a marathon a couple weeks ago, and of course loved it. I am kinda jealous because I did one last year, and said I would do one “next year” meaning this year. Well I didn’t do one because the training would limit me from doing the other things that I love, like hiking, doing 14-ers, and rock climbing. I really miss having a training schedule, a goal, the long runs, and the excitement and anticipation at the race! It’s such a toss up because I love running but I also love to do those other things, and now that I live in a beautiful place, I want to be able to do all the fun things I can here. When I did my last marathon, I was living in MN….nothing toooo exciting to do there, so it wasn’t a big deal. Here in Denver, I love that the mountains are so close and all the beautiful hikes I can do along with the rock climbing. Sigh….maybe I’ll alternate summer’s or something.

Done! I finished, which was my goal because it was my first marathon and I didn’t want to set a goal time and then be disappointed. It felt great to cross that finish line! I however, was in some pain and soooo cold. My lips were blue! Looking at these pics again make me wanna do another one! We’ll see

Evening ladies. How was your weekend? Mine was pretty great. Friday night the bf and I had some snuggle time, movie time and glass of red vino
Saturday I went for a nice long run and ran errands, cleaned, went for a walk and made lots of food for the week. Ben walked in, saw the kitchen and was like “Dear God it looks like a science experiment in here.” More on that stuff in a bit.
Today was so much fun. The weather was beautimous, 75 degrees, sunny and breezy. I went for a strenuous 6.5 mile hike. It felt great and I know I’m going to feel it tomorrow. Not so much here, not so much there, but yes, right there in the @ss region.
Ok back to Saturday- I made hummus, almond butter, and kabocha squash butter.
The kabocha squash butter is ridic amazing. A spin on pumpkin butter, but healthier and in my opinion, yummier. I got the recipe from genius HEABS. You can find her post about it here. Thanks Heather, it is soooo good!
First I roasted a kabocha squash
And then into the food processor went some pulp and the rest of the ingredients. I followed HEAB’s recipe exactly. Result:
Pure deliciousness. I like how there is no added sugar, it’s sweetened with a little stevia.
The food processor got quite the workout that day. Raw almonds were on sale at Sunflower Market for $2.99 lb. I got a semi-truck’s worth and made some almond buttah

I took a little break for some lunch. At Target I picked up some of these chicken sausages
I heated one up and had it over some cottage cheese
This sausage is really good, definitely had a sweetness to it. Kinda reminded me of breakfast sausage…..derkah der? I can see putting it in a lot of different things…..more to come.
Then I wanted to try the kabacha squash butter so I had this tasty little treat
I heated up some apple slices in the microwave, sprinkled with cinnamon and then used the kabocha squash butter for dipping. Yummafreakinlicious.
Ok so Halloween is in a couple weeks…still no costume! Any good ideas??

It’s Friday! Yahtzee!! Work flew by today so I was pumped about that. It’s going to be in the 70’s this weekend here so that means fun outdoor activities! We’re going rock climbing tomorrow and still undecided about Sunday.
I started my day with some of my new favorite tea. I’ve never seen it before in stores so I’m not sure if it’s new.
With some unsweetened vanilla almond milk and little bit of stevia, it was soooo good. And it’s caffeine-free, so huge for me because I can’t have caffeine and a lot of teas I find that look good have caffeine!
Ok I thought it would be fun to do another round of Janetha’s cool idea of “Flashback Friday.” My round 1 of Flashback Friday consisted of the first half of my senior year of college….. i.e. partying. This round is going to be about a totally spectacular trip I took during Christmas break.
The trip was actually a program through my college and was called “The Pacific Challenge.” It entailed of going to New Zealand and Australia and doing fun, adventurous activities. And then a group of us extended the trip one week longer and went to Fiji! We stayed in hostels, hotels, cabins, etc and went to several cities in each country. The activities were optional, never everyone had to do everything that was planned. Some of the activities included: sky diving, bungee jumping, surfing, kayaking, backpacking, rock climbing, white water rafting, black water rafting (in a cave) and many others. And then Fiji was a lot of relaxing, swimming, laying in the hammock, drinking all-fruit cocktails at 5 pm, eating fresh fish and getting to know the natives. Ok here are some pics!

This was our attire for skydiving! I look like a conehead. It was soooo fun and an experience I’ll never forget. Well I’ll also never forget it because I have it on video! It was tandem skydiving and my guy had a video camera. So cool!
This is what we bungee jumped off of!!! At the time, it was like the 4th highest bungee jump in the world!!! It might still be, but we had to ride in this little car thing to get to it, and then jump down in a canyon.

Here I’m getting all strapped in and about to jump. I was really nervous, scared, butterflies in stomach, wanting to piss my pants at this point. It didn’t help that the girl before me walked out to jump and then backed out!
“Walking the plank.” You have to walk out on this little ledge to jump off of.
Here I go!! I didn’t even think before I jumped, I just told myself I would only have this chance once in my life.
I was elated after I did it. Words could not explain how I felt.

When you travel for a longer period of time, and in a totally different setting, are you ok with a different workout schedule/eating routine? For this trip I remember I was anxious at times because I wasn’t working out a lot and the eating was sooo not what I was used to. I remember being glad to get back to normal when I got back. I am jealous of those who can travel and not get crazy about eating and exercise….it’s a work in progress for me!!

Some of you asked for the recip for the chocolate pudding I made with guar gum. It’s so easy and so versatile.
In a blender I mixed:
- 1 cup unsweetened vanilla almond milk (you could also use chocolate almond milk)
- About 3 tsp of cocao powder (I used Hershey’s dark) You can always add more if you like it more chocolatey…
- 1 tsp. guar gum
- Stevia to taste (any sweetener would work)
Blend and it will thicken up sitting for a couple minutes. You can put in the refrigerator for awhile and it will thicken more
You could add chocolate protein powder, banana, peanut butter, anything you like with chocolate!
I experimented with another pudding tonight. This time I made vanilla almond pudding.
In the blender went:
- 1/2 cup unsweetened vanilla almond milk (all I had left, so a smaller batch)
- Handful of almonds- about 15
- Stevia
- 1/2 tsp guar gum
- 1/8 tsp. almond extract
This picture was taken right after blending, I actually put it in the fridge for awhile and it got thicker. I had ABU in mind for this, but didn’t have any almond butter on hand (crazy I know). So you could just use ABU or regular almond butter.
This morning I only ran about 5 miles….yesterday I ran about 9, maybe 9.5 and I was a little sore! It’s been awhile since I’ve ran that far. I woke up super early and had all this time before work so I thought why not. It also helps that I recently put a bunch of new songs on the ipod….definitely makes a difference for me!
Brekki this morning was a first for me. Savory oats!
- 1/4 cup oats, 1/2 cup water, pinch sea salt (made in the microwave)
- 3 egg whites, 1 whole egg – mmm runny yolk
- sprinkle of low fat cheese and doused with hot sauce
Soooo good! I will definitely be repeating this guy. The hot sauce was key.
Lunch was leftover chili that we made in the crockpot last weekend. It’s 7 quart crockpot and we filled it to the brim. We made enough for a family of 12+. We wanted tons of leftovers!

Baked tofu! With veggies of course.
I put some peanut sauce over the veggies. This was sooo good! I tossed the tofu in a marinade of:
- tamari
- water
- rice vinegar
- tsp of sesame oil
Baked uncovered at 375…then at the end I put the oven on ‘broil’ to get it crisp. I was so hungry and it was so good I could have eaten all of it! Portion control? What?
I am so happy, I haven’t had ANY candy at work and don’t even crave it! As long I don’t eat sugar, I haven’t been craving it. I feel so much better when I don’t give into the junk….it’s like, why do I even do it??!

Hello hello. It has been awhile since my last post, but sometimes life just gets in the way! I’ve been having fun and TCOB (takin care of business). It was my lovahhh’s b-day last week so we celebrated one night with fam that was in town, then of course we had to go out with friends over the weekend. Let’s just say alcohol and my body are not friends. Last night I met up with a friend at a mall here and wanted to drop so much cash in Urban Outfitters, definitely one of my favorite stores. We went out to eat and I had an awesome cashew chicken salad but of course no camera!
Some other recent eats……
La Tortilla Factory wrap with hummus, 1/8 of an avocado, r.f. cheese and hot sauce. I like ‘em hot and crispy! I toasted them on the pan about 4 min on each side. With some low fat cottage cheese on the side. I wonder why it’s called cottage cheese? Where does the cottage come in?
One morning I was craving the peanut butter chocolate combo: t
I used barley flakes and added some Hershey’s dark chocolate coaco powder, stevia and pinch of sea salt. Drizzled some Sunflower Market natty peanut butter.
So at my latest trip to Vitamin Cottage I picked up some guar gum! Guar gum is a natural thickener, binder and volume enhancer.
So I decided to make my own little chocolate pudding with it! It doesn’t take long to thicken at all and leaves no after taste.
Just to show you how thick it gets. I only added 1 tsp and it got super voluminous!
I thickened up some mushroom broth for a a thicker sauce for my chicken and veggies:

I love this guar gum shizz! I am definitely going to experiment more with puddings and in smoothayyys.

Well I thought I grabbed the right one, and took a full dropper’s worth right in my mouth.
I thought I was taking melatonin (I use it to help me sleep sometimes)
It hit the taste buds and unfortunately it was too late and I swallowed it and wanted to gag. I took a big swig of vanilla stevia. Yeah, it tastes good in things, but not on its own!!! Yuck!!!!!!

Evening ladies….not sure if any guys read this. Holla at me if you’re a dude and you read my blog! :) Monday came a little too fast. The alarm went off a little too early. My decision to not work out this morning and reset the alarm for 1 hour later, also required no hesitation. My body needed a rest though, I’ve been doing some long runs and haven’t had a day off since last Wed. Plus my legs were sore from doing weights yesterday…those pesky lunges!
I don’t have too much to say about my meals as of late….comfort food pretty much sums it all up though! Last night I made chicken coconut curry with barley, so yum.
This pic isn’t of what I ate, it’s the leftovers in my tupperware….I was so hungry that I didn’t take a pic of it all on my plate! :/ But this is the chicken coconutty goodness in all its glory. Here’s a brief rundown:
- cook boneless chicken chunks in skillet, when mostly done I added broccoli, cauliflower, mushrooms and onions
- In separate little sauce pan I mixed 1/2 cup lite coconut milk with ff chicken broth and about a TB of red curry paste. I added a pinch of stevia because it’s soooo good with a little sweetness to it. Warm up enough so the curry paste is dissolved in the liquid and its hot. Then add the liquid to the chicken/veggies and put over whatever you like-rice, noodles, etc. We had some already cooked barley in the fridge so we just used that.
Ok back to today. Was in a mad rush this morning, so no pic of breakfast. Pretty uneventful though-huge green monster and 1/2 an apple. no real time to make anything else.
Worked my tail off today, then went to the dreaded DMV to stand in line forever. I got my Colorado driver’s license though (finally after living here for a year!) The worst part for me was probably when I had to put my forehead and face in that contraption so I could read the letters. Ahhhhh…how many other sweaty, porous faces had been on that thing today?!?! I just shut that thought outta my brain. Tonight before bed: wash face for sure. I’m not good about washing my face regularly….or even often for that matter. This is coming from a girl who had bad acne when I was 13yrs old until about 16, when a prescribed pill finally worked for my face. I tried every brand of face wash on the shelves, then finally when I started getting prescriptions, they’d work for awhile and then the acne came back. Uhhh…that was frustrating. I’m so glad now I don’t have to deal with that anymore, it was such a self-esteem and confidence killer, especially at that awkward time in my teens. Ok enough about that!
Dinner was comfort food. Much needed, as today was gross outside. Cold and rainy all day. So we made tuna casserole!
Albacore tuna, whole wheat noodles, broccoli, peas, low fat cream of mushroom, and topped with nutritional yeast, for that cheeeezy flavor.
Nada much else goin on, I’m gonna try and get to bed a little early so I can wake up early and go for a run!

If you like it, how do you use coconut milk? This is the only way I’ve ever used it, but its soooo good I’d like to incorporate it into other dishes.
Did you have pimples when you were younger or were you one of those lucky beotch’s girls who had a clear complexion? Like I said, I had pimples, and it would go in streaks of being bad and not so bad, depending if the meds worked!
Good Morning! I guess it’s already 11:30 here so almost afternoon! That’s what Sunday’s are for right? Sleeping in and relaxing. This morning I had half of a banana and went for a nice little run. I didn’t go really far because I wanted to save some energy to do weights when I got back. I did:
- Lunges w/ 20 lbs each hand
- Squats w/ 20 lbs each hand
- burpees
- jump squats
- jumping lunges
- mountain climbers
- Ab work
‘Twas a nice little workout. Then I searched the internet for a new Dell battery for my computer because it’s so dead that if my charger pops out of it, it dies! Sooooo annoying when that happens!
So at about 10 am I starting getting hungry and wanted something warm and creamy. I wanted oats and wanted to use pumpkin, but decided to jazz it up a bit.
Mmmm-mm! did this hit the spot! I give you my pumpkin gingerbread oatmeal:
Ok here’s what I did-
- Simmer 1/3 cup oats and 1/2 cup water, 1/2 cup unsweetened vanilla almond milk
- When almost done, I mixed in 1/2 cup pumpkin
- I sprinkled in some ground cloves, nutmeg, ginger and a bunch of cinnamon.
Then I added in the MVP:
I just only added 1/2 tsp but I could definitely taste it.
Ahhh full and satisfied
I didn’t post yesterday but I went for a run and spent the day running some errands and getting Ben’s b-day gift! It is this coming Wed….hope he likes it!
While running errands I drove right by a Vitamin Cottage, and I’ve never been to one. So I whipped a U-y and decided to check it out. I’m so glad I did! They are cheaper than Whole Foods and have different products and variety than Sunflower Market. I love their bulk bin. They had whole wheat Udon noodles! Yumm….unfortunately they were all out but I’m going to check back fo sho.
I did get a couple things though. Check out the loot:

For dinner last night I made something that I saw Danica post on this blog. I have been craving enchiladas since I saw that post so that’s what went down last night. With a few changes because of what I had on hand.
Chicken Mushroom Enchiladas Verde:
- To make four enchiladas I used 2 boneless chicken breasts. I cooked them on a nonstick pan and seasoned with garlic powder, cumin, chili powder and sea salt.
- I added mushrooms and onions and cooked until chicken was done and mushrooms were tender.
- Then I used La Tortilla factory low-carb, high fiber tortillas for me, and regular for Ben.
- For mine, I used half of a light laughing cow cheese wedge in each tortilla, topped with chicken/mushroom mixture and added cilantro
Then I folded the tortillas over and poured this whole jar over the tortillas:
Then I sprinkled some low fat mozzarella (only kind we had) over the top and baked covered for about 20 min, or until the insides are hot and melty.
Out of the oven:
I top mine with more cilantro and eat with a side of black beans. Yummers!

Yikes, I almost didn’t put this one up. I was perfected my “robot” move, apparently next to a very awkward skinny guy.
How some nights of drinking ended: ordering Toppers Stix (aka heart attack in a box) in a drunken oblivion. Looks like I was fancying the ranch dip that night (!!) Not all nights ended like this, and it was never my idea. But when that cheesy smell hits your face it is hard to say no. Look, this time I was already dressed in my sweats! I always felt so shitty the next day after eating that garbage.
Ok so that was just a peak into a little of my senior year. I didn’t party all of the time, or every weekend for that matter. I definitely had my share though, and I’m glad I’m done with that part of my life! I had a ton of fun, but I’m so glad I don’t treat my body like that anymore.

Were you (or are you) a party animal in college? Do you still party a lot or are you over it? I partied for sure, sometimes too much, but I still got good grades! I don’t party much anymore at all…my body can’t handle it!
What’s your favorite themed party? I love different decade-style parties, 60’s, 80’s, etc. I didn’t like the parties in college that had lame themes- golf pros/tennis hoes. Come on, just tell the girls to dress slutty….
Do you feel like alcohol is ok in moderation, or do you feel like it throws off all your good eating/exercise efforts? FOR ME, I really like to only drink once in awhile, because alcohol really stimulates my appetite, and not the healthy food either. And if I drink a little too much, I’m laid up the next day and am totally unproductive. Worthless POS to be honest! :)

And because my dinner was low in carbs, and I don’t want to wake up in the middle of the night starving (which sometimes happens when I am low on carbs) I made a little dessert.

I took some of my leftover roasted butternut squash and mashed with a fork and microwaved. Then I microwaved some chopped apple with a little water so they were soft. I mixed the apple with the squash and topped with cinnamon and almond butter. Mmmmm soooo good!! I didn’t want this bowl to end. Ahhh satisfied.
Other than my foodgasm, today was pretty uneventful. I ran about 6 miles in the cold this morning. It was in the low 50’s today but sunny so it felt like a nice fall day.

Do you ever wake up in the middle of the night starving and can’t sleep until you eat? Happens to me if I haven’t eaten enough…..I hate it though!
